Implementing an HACCP concept

Establishing an HACCP concept comprises 7 steps:

1. Risk analysis:
   
Identification of possible risks in food production at all stages of production.
2. Identifying critical control points (CCPs):
    Determining critical control points that are associated with risks.
3. Determination of limit values:
   
Establishing limit values in the area of critical control points.  
4. Putting in place surveillance measures:
   
Specification of measures to ensure and monitor compliance with the limit values from point 3.
5. Definition of corrective measures:
   
Determining measures to be taken if the limit values are exceeded. 
6. Verification and control of the measures:
   
The HACCP concept must be regularly reviewed and adjusted if necessary.
7. Documentation:
   
To ensure traceability and transparency, all measures and corrective actions should be documented.

HACCP concept, multi-stage filtration system

Different production areas require different levels of hygiene. For this reason, two- or three-stage filter systems are ideal for meeting strict hygiene requirements and complying with HACCP guidelines.

EHEDG Guideline 47 recommends installing at least a 2-stage filtration system in production areas with a medium hygiene risk, and a 3-stage filtration system in areas with a high hygiene risk.

Filter stage 1 Acting as prefilters, pocket filters remove larger particles such as dust and pollen from the supply and circulating air.

Filter stage 2 Cassette filters provide impressive dust holding capacity for fine dusts and microorganisms.

Filter stage 3 HEPA filters remove over 99.995% of remaining particles, germs and viruses (e.g. coronaviruses) from the air.
